Either will work.
You (normally) get what you pay for when it comes to converters. More money will buy you better tech and parts.
Why would you want your converter to go into lockup when you are towing??
Unless it is a very small trailer and you live in a very flat area with little or no wind.

So, triple would allow better towing and and would not lock up in tow?
I see some sell and single for the same price as a triple.
I have talked to a local builder and can build to the requirements that you have mentioned in another thread, just want to order the correct TQ.
Another question would the deep pan, are they all the same or is there a brand that stands out.

Okay, sorry about that.
As your truck accelerates, the converter isn't using any disc(s) whatsoever through first, second, third or even overdrive until the valve body signals your converter to go into Overdrive Lockup.
That is the ONLY time discs are being used and the only time there is an actual mechanical coupling going on.
"Tow-Haul" Mode for example, simply prevents the converter from "locking up" which tends to keep the engine in a better operating range for towing.
When the converter is "locked-up", it IS using the discs inside the converter either 1,2,3 or even 4 of them.
NOT trying to be condescending here, maybe you know this stuff already (??)
Anyway, the number of discs don't really matter a great deal. Just buy a good converter and carry on.

That would be my advice.
A deeper pan is a good idea to keep any particles that may show up inside your tranny from getting stuck to the screens on the Governors. They hopefully fall to the bottom of the pan and stay there.
There is plenty of clearance between the pan and the ground on these trucks, so going "quite deep" shouldn't be an issue.
