I'm thinking about giving these a try this year, they seem to be quite popular in the Hellcat/Demon world. 30.2'' tall, so a tad shorter than our 31.5'' OEM tires- but I don't think it'll require a 5th shift at my power level (109mph trap speed with 4.56 gears, manual trans).

The issue I'm having is wheels! I can't seem to find anything off the shelf in 18x10 that doesn't have a neg offset. Unfortunately with our bolt pattern, most of the wheels I've found are "bro-dozer" types that belong on lifted trucks with 35''+ tires.

This is the cleanest looking one I've found and can be had without a dual bolt pattern (and the correct 78mm hub bore) but the -24mm offset is going to hang the tire outboard 2'' more than the OEM 22'' wheels.

Thoughts? I don't want to grind the rear calipers to run 16'' wheels. I imagine with the tire hanging that far out it'll #1- look stupid and #2- sling rubber all over the bed sides.

You should be fine with that tire, based on the diameter, you should be able to go 118 mph in 4th gear at 6,000 rpm. no need to shift. I run an M&H 30/14.0-16LT Cheater slick which is 30" tall and I have gone 127 mph in the 1/4 with 4.56's and I am still in 4th gear.
