I think you mentioned about the white headers in your post a week or so ago. Regardless of what colors or shine you are shown, coatings often change with heat anyway, in spite of what you may be told. My shiny silver ceramic header coating is now a very flat silver coating after several hot and cold cycles. As a heat barrier, nothing has changed in that regard, which is most important to me. That off-white color in your post may turn to a VERY off-white color after a while, I can't really say.
The only way to stop discolouration is to not start it up. Mine are silver, still look good, but who knows what colour they started off as lol not so sure about black hahaha

The headers are 304 stainless, but what you're looking at is a polish ceramic coating, not the actual metal. I wouldn't think it would crack over time.
No, the jet hot style coatings are thin but don't crack and fall off. I'm not sure how something that thin provides a heat barrier, but it does.
