Try Barry University. They seem to have the best "Credit-for-Experience" ratio I have seen!

Portfolio

You may not have been in a classroom for a while, but you have never stopped learning. Your professional and community activities are valuable. The portfolio program allows you to translate your real-life learning into college credit. You may earn up to 30 credits by demonstrating college-level learning in one or more of the following academic disciplines: behavioral sciences, communication, humanities, natural sciences, social sciences and three special topics.
If you are pursuing a Bachelor of Liberal Studies, Bachelor of Professional Studies, Bachelor of Science in Information Technology, Bachelor of Administration, or a Bachelor of Public Administration, the portfolio is optional. If you are pursuing any other Bachelor of Science degree, the portfolio is a requirement for graduation.
Thousands of ACE students have completed portfolios and considered this experience time and cost effect as well as personally rewarding.
For further information please refer to the Assessment of Prior Learning Hand Book that contains the Portfolio and additional prior learning credit options.

Associates in Technology

Im thinking the Bachelors in Technology with a specialty in Instruments/Electronics....I am an Aviation Electronics guy after all.;)

But if I can get an associates for now, that would be dope.

Depending on what you want to do with it you need to make sure the school is accredited.
