Not sure on the tech part of that question, but in the meantime, try a soda can behind the gas pedal

you mean a valet mode. yes. that can be done with a programmer

You can go with a programmer and a valet tune. I got one and have tested it. It works.
Still don't see how this is going to help you any....

Seriously though, it shouldn't be too difficult to do, but if you have to do that to control yourself what's the point of having the truck? Might as well trade it on a Prius hehehe. Just need to use your head a little more in the future and chalk this up to experience. You ain't the first to get caught and won't be the last, just learn your lesson and move on.
