So started the truck up today for the first time in like a month, got error code P1281 (Accelerator Pedal Position Sensor 2 Circuit Performance). Any clue on where to start with this one?

P1281 is "engine cold for too long"
If you have installed a lower thermostat and fan routine, welcome to why I tell everyone NOT to do that. The stock 185 is fine, and much lower just screws everything up.
Otherwise, you may have a stuck open thermostat, or a coolant temp sensor issue.
