Beyond question, the most important thing you can do is to talk to a few people who have had their engines built by the shops you're considering. There are plenty of people who are able to do the job, but it's the shops that can deliver it without any bullshit hassles that are golden.;)

Do your homework. Big time.
 
Have parts on hand and ready to go (to include gaskets, fluids, bolts, etc.). Just one missing part put the install on hold.

Have good communication with your builder. Does your builder have ample time for your install? Are you close to your builder to check up on him? Do you have a friend close by?

Have some spare coinage ready for items not foreseen. There will always be something.

Talk prices before the install, not during or after the install. Make sure it is clear by both parties.
