New BBQ Grill

I went and got something for myself. A new barbeque grill. I had a weber egg shaped grill but didnt offer the flexibility to do some of the more advanced grilling methods im diving into. I picked up the Kingsford Barrel with smokebox. Its got the cast iron grill grates and adjustable height for the coals.

It was sold out so i got the already assembled floor model. Its not rediculously heavy, just awkward. That damn wing was in the way so bad. I had a hell of a time loading this thing without scratching my truck.

I was thinking id rather drop this fuckin grill from 5 feet than scratch my rig. Thank god i did neither.

Any tips on using the smokebox?

Never used a smoker, so I will follow this thread to see how it's done!!
 
I have had those smokers off and on for over 15 years. They are great.

Get a Smoke and Spice cookbook.

It is one of the better ones out there in my opinion. It explains a lot of things for the beginner, and has some great recipies.

One word of caution. It's very easy to over smoke food. It can taste great, but it can also make you violently ill. I know. Been there and done that.

Brinkman makes one where the steele is 3 times thicker and lasts over 10 years. the knock offs , your lucky to get 3 years out of them. one of my favorites is get a boneless pork roast and wrap in a bannana leafe and put it on the big grid. use hickory in the smoke bine to the left. when It's done slice it as thin as you can and use your favorite BBQ sauce and make smoked pork sandwiches. dems some good vitil's Jethro.

A subject I know a little about!!

I have a Klose smoker/grill www.bbqpits.com Key to any smoker is control of the fire box. I finally stepped up to 1/2" steel box with the Klose and no regrets. So much easier as you spend way less attending to the fire box.

There are far too many styles of smoking....sauces, rubs etc As previously mentioned get a couple books and experiment. I personally like apple wood or mesquite and dry rubs. I like sauces but really enjoy dry rubs. Dry rubs are a world onto themselves. Once your firebox gets seasoned you'll need less and less wood and rely on briquettes. No, not those kind!!

A book I'd recommend for getting started with dry rubs is Paul Kirks http://www.baron-of-bbq.com/Books.htm Start with his older book (2nd one down). If you like pork ribs key is mustard sauce....then dry rub!!!

btw...just threw a tri-tip on 2hrs ago. will add 2 whole chickens shortly. That should get me through the weekend!!
