some type of fastener of the kwick release type with a security type key system---I have arthuritis in my hands hahahaha and am looking to be able to remove and reinstall the wing in 2.5 seconds or better

You could do it with a stud and a cam style lever arm. You would also have to elongate the fastener hole in the bed.

I guess you could try to drill / cotterpin, but if you don't get it tight enough it might wiggle. Like everyone else said, its only 1 nut on each side
