I been making 1.79 60's on some 12 year old slicks!!!! I got some new ones to try here soon
 
.. in 1st gear the truck would stumble bad, almost die, sputter then catch on and pull like a bitch.

Losing combustion/incomplete combustion going on for some reason...

Seems like there is either not enough fuel to burn (during a lower engine load 1st-gear pull (unlikely to be lean)), or liquid fuel that is trying to burn.

As the engines can't be tuned by gear, it should be one or the other.

Sounds like an accelerator pump issue from back in the day of holley carburators. Engine leans out until the fuel gets there. Nowadays it is the responsibility of the TPS and MAP sensors to determine acceleration fuel rates, for sure, a combination of sensors. reflecting back to fuel tables, until WOT. That engine is a unique build and can have a multitude of issues until root causes are ironed out. :) have fun! The learning is the best part!
