If you like your chili hot, you will like this recipe. Easy enough to lose some of the heat, whatever you do don't lose the chipolte.
5 lbs sirloin (cubed)
1 lb ground beef
1/2 lb smoked bacon (diced)
2 beers
8 tbsp chili powder
1 tbsp cumin
1 tbsp paprika
1/2 tbsp oregano
1 can tomato paste
2 cans crushed tomatos (big cans ? oz)
1 can tomato sauce (hunts big can)
5 habernero peppers (diced)
2 yellow chili peppers (diced)
1 anaheim pepper (diced)
2 cans chipolte with adobo sauce (7 oz)
1 can diced green chiles (7 oz)
8 cloves garlic
1 chocolate bar
Render the bacon then remove bacon and brown the rest of the meat in the bacon fat, adding 1/2 of chili powder and salt and pepper while browning. (might have to do in batches) Return all the meat to pot and add 2 (or 3) beers. (make it decent beer, no bud here LOL). Add the rest of the spices at this time too. As soon as it starts to boil add the tomatos, sauce, and paste. Let simmer for 1 hour.
Add chilis and garlic. Let simmer 2-4 hours.
Melt chocolate in the chili and serve with grated cheese (cheddar, farmers, whatever) on top. Best if you have lot's of cornbread.
