I put Tony's oil cooler lines on my 10 saturday (which are awesome:rock:) and now once the engine is at temp my oil pressure gauge reads half way between 50 and 75 psi (guess you could say around 60 psi) but while driving it stays steady at 75 psi. is this normal? I never really paid that close of attention berfore swapping the lines.

Yep thats right

As an aside, has anyone hooked up a mechanical gauge to verify how accurate the stock gauge is? I'm not saying the stocker is false... it is reading pressure, and if it gets too low, we'll get a warning light along with a "0 / near 0" reading, but electrical senders can have variances that are greater than mechanical gauges.
