Furry little bastards are going to eat me out of house and home. At least they now eat cheap dog food. Karen was feeding them graham crackers, animal crackers and other food. Now she buys big bags of dog food and they are just as happy.

My mom was a cook or chef for most of her working life, so I learned to cook from her.

When we were looking to have a house built, it had to have natural gas available so I could get a commercial range. This is a true commercial range, not a domesticated one like Wolf, or some of the others out there. In fact, due to the pilot lights it's not even legal to install in a residence any longer.

I know I'm going to miss the hell out of it when I retire and sell this place.

When we travel someplace, we always rent vacation homes where we are going to be staying. This is the place we stayed at the last time we were at Lake Tahoe. You can see that these places generally have nice kitchens.

Now, with all that said, here is what I can tell you. In the places we have stayed at I have worked cooked with Wolf, Thermador and Jennair ranges. To me, and remember this is my opinion, and you have to consider what I have at home, but I was not impressed with the Jennair. Now they are better than a track home GE range, but not at the same level as a Wolf.

What I look for is the BTU output of the burners. I like to get a cast iror pan smoking hot so I can quickly sear meat. Both Wolf and Thermador are pretty good at this. You also want to see how easy they are to clean up. Mine is a bitch. Once a year I disassemble some of it and give it a good cleaning. In fact, that is something I will be doing in the next couple days.

Configuration. These ranges come in different sizes and configurations. Mine is a 36 inch range with 2 large burners and the 24 inch griddle. Some look at that and wonder how you can get by with just 2 burners. To me the griddle is one large burner.

One more item. Get a good range hood. These things put out a lot of fumes and smoke. I have a Vent-A-Hood. I choose this hood because it does not have screen filters. It uses centrifical squirell cage fans that spin the grease out of the air before it exhausts it. It works well and is quieter than a lot of the regular exhaust fans. We were at one time looking at having another house built and it would have required a custom hood. It would have used screens, and the motor/fan unit would have been on top of the house to reduce noise. In this case the hood was going to be 9 feet long, and the Vent-A-Hood would not have worked as well since I was going to have a Char Broiler.

Hoods is something I have a lot of experience with. Residential style hoods are not even close in performance to a real commercial hood. Res hoods use airflow to try to draw in the fumes. Commercial hoods capture the fumes in the hood and the airflow just evacuates it. If you can get into a small commercial hood the performance will be a lot better.

That said I did a large res hood at my house. I knew it was going to be loud and that with the fan at the hood the duct through the chase was going to have to be sealed like crazy. So I took the whole fan setup out, and installed a more powerful inline fan in the attic. Belt driven with the motor outside the air stream. It's super quiet in the house, performs much better than a normal res hood, and since the entire duct is at a negative pressure I don't have any fume leakage into the house.

Doing big supped up hoods creates other issues with your hvac system that have to be resolved, especially if your house has spray foam insulation. Lots of things need to be considered before doing some of these things.
