Passing the info to my wife...she is poised to replace our counter top electric with a commercial gas unit...the hood info will be interesting to her...as a chemist she claims to know hoods...but Joe's comments about HVAC etc. will be very useful!

Hoods is something I have a lot of experience with. Residential style hoods are not even close in performance to a real commercial hood. Res hoods use airflow to try to draw in the fumes. Commercial hoods capture the fumes in the hood and the airflow just evacuates it. If you can get into a small commercial hood the performance will be a lot better.

That said I did a large res hood at my house. I knew it was going to be loud and that with the fan at the hood the duct through the chase was going to have to be sealed like crazy. So I took the whole fan setup out, and installed a more powerful inline fan in the attic. Belt driven with the motor outside the air stream. It's super quiet in the house, performs much better than a normal res hood, and since the entire duct is at a negative pressure I don't have any fume leakage into the house.

Doing big supped up hoods creates other issues with your hvac system that have to be resolved, especially if your house has spray foam insulation. Lots of things need to be considered before doing some of these things.

Very true. It can really cause problems with the draft on the fireplace.

If you have any questions as you move forward let me know. Basically the main issue with your existing hvac is that the hood will exhaust more air from the space than the hvac system brings in from the outside. This puts the house at a negative pressure drawing contaminants in from outside through any openings. In a very tight house, like one with spray foam insulation, there isn't enough infiltration available and the next source of outside air is drawing it down through your fireplace whether its got a fire in it or not. Bottom line you need a source of outside air tied into the hood. More than a few options for this depending on geographic location and load. You always want any building at positive pressure.

If you're bringing in a lot of air you need to consider tempering the air before it is blown or drawn into the space. This is especially true in very hot, very cold, very humid, and very dry environments. Again the options vary by location and volume.

Never used one. However they are one of the more popular ones in line with the Wolf.

i agree with Prof, one simple question and man one can learn butt loads.

been lookin on the stoves for a bit, did not realize the specs on the hoods.

want to get rid of that dam electric crap & go the out of the ground natural gas, lol. only way to go.

i agrees with ya on the griddle/grill as burners also. same heat :rock::rock::rock:
 
The greatest advantage of gas over electric.

Set a pot of water on high and get it to boil. Starts to boil over with electric and it continues to boil over. With gas, the heat is gone and it's over.

Tempature control with gas is instantanous.
 
Buy the best for the sake of efficiency and functionaility.

But, don't expect to always get your money back at the point of sale.

It certainly helps, but is will not neccesarily provide a tangible return....

i just hate to see a good kitchen go to waste...

some of these homes i've worked in....

it's nothing to have 20-30-$40K+ worth of kitchen appliances...the coolest stoves, hoods, ranges, the stock pot waterers over the stove....but the fuggers are never there to cook....:mad:

oh well....guess i'm jealous....
